The Savers' Pot #1

This recipe uses ingredients that were leftover by the end of the week. I thought it would be wonderful to come up with something using a bit of this and that. Thus naming it, THE SAVERS' POT! Ideally, I'll also be coming up with different variations of the savers' pot each week!! Exciting?? =)

This pot of stew is SOOO EASY to cook and it probably only takes 15 mins of your time!!!




Ingredients
1.5 kg minced pork
5 celery sticks (cut to smaller pieces)
2 apples (cut to smaller pieces)
1/2 cup chopped pumpkin
2 cups chopped spinach
5 tbsp blueberries
2 tbsp olive oil
1 tbsp minced garlic
3 cups of water

Steps:
1. Add olive oil into the pot. After the oil is well heated, add in the garlic.
2. When garlic turns slightly golden brown, add pumpkin, celery, apples into the pot. Add 1 cup of water and simmer for 5 mins or until pumpkin softens.
3. Add in the minced pork and continue stirring to prevent the bottom from getting burnt. Add the rest of the 2 cups of water into the pot. (if you prefer your stew, less soupy, add in 1 cup of water instead of 2)
4. When the minced pork is almost cooked, you can start adding in the spinach and blueberries.
5. Once cooked, portion stew into individual containers for easier feeding.

*Important note: Stew can only last for 3 days if kept in the lower part of the fridge/ chiller, while stews kept in the freezer can last for 1 week- 1 1/2 week. Heat up before feeding.
