Chicken Liver Pie

Easy to make pumpkin pie crust that you may use for any kinds of pies. My dogs were drooling and were patiently waiting for their pies. Even my choosy little one couldn't resist them! =D Your dogs will love the pies too!

Do you know... offal is a good source of protein and is richly packed with nutrients? It contains Vitamin A, C, D, E, K, B and minerals such as zinc, maganese, selenium and iron. I would normally feed my dogs one meal of offals in a week because offal is rich in Vitamin A, it should be fed in small amounts frequently.

Ingredients for pie crust
1 cup plain flour
1/2 cup wholemeal flour
1/2 cup grinded pumpkin
1 tsp garlic
2 eggs
2 tbsp coconut oil*
2 tbsp olive oil*
(or 4 tbsp of olive oil)


Ingredients for pie filling
300g coarsely grinded chicken liver
150g grounded beef
50g cream cheese (cut into small pieces)

Steps:
1. mix plain flour and wholemeal flour together.
2. Add in pumpkin and garlic to the flour mix.
3. Form a valley in the middle of the flour mixture, add in 2 eggs, coconut oil and olive oil. (Add in another egg if flour mixture is too dry)
4. Knead the dough until it is firm.
5. Roll it flat and using 2 different sized round cookie cutter, cut equal numbers of big and small sized pie crust.
6. In a mixing bowl, mix chicken liver and grounded beef together to form a paste.
7. In the cupcake holders, lay the bigger cut pie crust at the bottom, add in about 2 tsp of meat filling and a small piece of cream cheese into the pie. Cover with the smaller cut pie crust on the top.
8. preheat oven for 10 mins at 180C and bake pies for 30 mins.

Serve at room temperature.
